Another recipe success, thanks to Half Baked Harvest!!

Over the weekend, I needed something quick and easy to make for dinner since it was for just me and I had a never ending list of things to do before vacation.  Of course Half Baked Harvest would have a 15-minute recipe and that is all it took for me to say yes please!

Taking it back old school, and the college kids poor food – this recipe is 75% made up of Ramen Noodles!  Sometimes, these are anybody’s guilty pleasure – don’t knock it until you try it, you know you miss Ramen too!  Aside from the Ramen Noodles, there is also zucchini zoodles mixed in as well – and most importantly, I topped mine off with a sriracha hot sauce to give it an extra kick.  Another seasoning to add (if you like the hot) would be red pepper flakes!

All in all, this was the perfect comfort food to have on a cold winter evening!

Hallelujah I have found recipe heaven!!

A coworker had recently shown me the famous and tasty Instagram account for Half Baked Harvest and instantly, I started screenshotting meals I wanted to make ASAP!  First up, Spicy Turkey Taco Salad with Baja Dressing!  No crazy ingredients needed either!

  • Ground Turkey
  • The simple and most expected seasonings
  • Cilantro, of course if desired and I am a huge lover of cilantro!
  • Greens, Black Beans, Avocado, Mango, Limes, Jalapeno
  • Cheddar Cheese and Tortilla Strips
  • Greek Yogurt

Oh. My. Goodness.

Such a simple recipe and absolutely delicious!!!! Can’t wait to try out more of her recipes – next up is her 15-minute Garlic Butter Ramen Noodles and Cauliflower Shawarma Wraps with Green Tahini and Feta so stay tuned!!!

Through the Woods (and to Grandmother’s House We Go!!)

Through the Woods (and to Grandmother’s House We Go!!)

Over the weekend, and yes, the chilly below freezing temperature of a weekend, my family and I took a horse-drawn wagon ride (of course with warm blankets and hot alcoholic drinks) to a five-course dinner through Hillman’s private Elk woods.  This Elk viewing ride and gourmet dinner was booked at the Thunder Bay Resort in Hillman, Michigan.
Depending on how much snow has fallen, you will either take your journey via sleigh or wagon – and of course guided by beautiful Clydesdale horses (ours were named Mike and Spike ha-ha).  A bit easier on the horses too, we were accompanied to a wagon, along with 75 other people!

The journey to the cabin, where dinner is served is about an hour long ride.  You literally go over the bridge and through the woods….and I am sure you can guess how the rest of the song goes 🙂
Beautiful sights to see and amazing history is told through your trek.  And if you get a quiet moment in-between and are anything like me, the sound of the horses galloping is music to my ears!  Please tell me there is an app so I can fall asleep to this every night!! Moving through the woods, we were told to keep an eye out for any Elk bedded down in the snowy woods – but with our luck, we saw none.  That was until we reached another protected area where both the male (the Bulls) and female (the Cows) Elk were in groups – probably to keep warm!  There was roughly 30 of these magnificent animals and you got to watch them in their natural habitat from just a few feet away!  The only problem, my fingers were too cold to even try to fumble for my phone – so limited photos were taken!

Our hour long tour hit a low of 3 degrees!  So you can imagine how happy we were to stand by the cabin’s stone fireplace and warm up to lots of wine!  Did I mention this five-course meal also includes wine tasting and all you can drink wine!  Now that’s my kind of dinner 😉
Once inside, you were welcomed by wonderful staff (who were born and raised in the Hillman area – in fact a husband and wife began this resort years ago and now the father and son run the resort and do all of the cooking!), a comfy and cozy log cabin and a bathroom that might just be confused for the gift shop (and I will leave you with that, just make sure to take your camera into the bathroom – it sure is a sight to see!)
Presentations were shared, dinner was served all while you got to enjoy a few hours with family and friends.  And not to mention, the dinner was fantastic!  Ladies served first – which was very classy!
Ticket prices can include lodging too; however, because my boyfriend’s family lives there, we opted out of the lodging since we were only 15 minutes away.  Tickets also includes all you can drink wine, but there is also a cash bar with beer and liquor.  Aside from the Elk viewing, the resort/golf course also offers a New Years Eve party (which we were told always sells out) as well as a Murder Mystery weekend!  Not to mention, the golf course is something to see so book with a special rate in the Fall – and get in a round of golf followed by a 5-course meal (sometimes up to 8 or 9)!
